Reporting to the production manager, the role will involve working in a chilled environment preparing and cutting meat and poultry products for packing to company specification, whilst ensuring quality, consistency and traceability procedures and standards are always followed.
Butcher responsibilities:
Prepare meat to customer specification, including boning, tying, grinding, cutting, trimming, curing, smoking and pickling.
Pack meat to company standards.
Fulfil customer orders.
Create/follow prep lists for production.
Making sausage to recipe, meat breakdown.
Meat grinding, mixing, hand-crank stuffing sausages.
Familiarity with a variety of casings and other butchering equipment (bandsaw).
Meat room and butcher room organization and cleanliness.
Base knowledge of ordering and par levels.
Follow the company’s food safety culture through production and cleaning.
Maintain and clean workstations to reduce the risk of food contamination and adhere to food safety guidelines.
Store meat appropriately (e.g. Hanging meat, cold storage at correct temperature).
Take an active role in your own development and continue to strive to improve your knowledge and how you apply it.
Ensure that wastage is minimal, and you work in a cost-efficient manner.
Follow internal procedures in relation to meat and food preparation and temperature controls.
