						 •	Ideally, should be very experienced in Chinese cuisine.
•	Should have experience managing large scale production.
•	3+ years' experience in an executive kitchen position.
•	Demonstrated knowledge of current restaurant industry trends.
•	Must possess culinary creativity.
•	Strong knowledge of food sanitation and HACCP regulations.
•	Strong leadership, and the ability to efficiently train kitchen staff.
•	Precise time management, & superior organizational skills

						Description
					
					- Create, oversee & maintain all prep processes (cleaning, cutting, mixing, marinating, boiling, frying, roasting, portioning, storage)
 - Make sure central kitchen staff, and restaurant kitchen staff are trained to prep, portion and cook food according to company guide lines.
 - Create central kitchen strategy to make sure all food is ALWAYS prepped and portioned in time to be sent out to branches.
 - Create and cost new recipes.
 - Create central kitchen plan for mass/bulk implementation of new recipes.
 - Implement new recipes.
 - Implement and maintain HAACP regulations.
 - Recommend/source/maintain kitchen equipment and utensils when necessary.
 - Assist in finding new kitchen staff when necessary.
 - Create a training methodology for all kitchen staff
 - Train central kitchen staff and restaurant kitchen staff in all production processes, and procedures; work in both till all staff are trained according to company guidelines
 - Constantly visit central kitchen and restaurant kitchens to make sure standards are being maintained and/or work alongside cooks, and kitchen staff.
 - Create a kitchen roster/work schedule.
 - Any other responsibilities that may be necessary, within reason.
